The holidays are synonymous with many things, including various foods and beverages. Foodies know the holiday season is a time when baked goods, and cookies in particular, take center stage. Celebrants can keep that in mind and prepare a batch of these "Iced Cinnamon Star Cookies."
INGREDIENTS: (Makes 24 Servings)
For the cookies:
2 1/2 cups almond flour
1 1/4 cups powdered sugar
2 teaspoons ground cinnamon
1/4 teaspoon salt
2 large egg whites
1 teaspoon vanilla extract
For the icing:
1 cup powdered sugar
3 Tablespoons milk, more if needed
1/2 teaspoon vanilla extract
DIRECTIONS:
For the cookies:
In a large bowl, whisk together almond flour, powdered sugar, cinnamon, and salt. Add the egg whites and vanilla and mix until a soft dough forms.
Wrap the dough in plastic wrap and refrigerate for 30 minutes.
Preheat oven to 300°F. Line a cookie sheet with parchment paper.
On a surface dusted with powdered sugar, roll the dough to 1/3-inch thickness. Cut out stars using a 3-inch star cookie cutter, then transfer them to the prepared cookie sheet.
Bake for 12 to 15 minutes until edges are lightly golden. Let cool on baking sheets for 5 minutes, then transfer to wire racks.
For the icing:
Using a fork, combine the powdered sugar, milk, and vanilla. Use a whisk to continue stirring the icing, adding more milk in teaspoon increments as needed to reach the desired consistency.
Once the cookies are completely cooled, spoon the icing on top of each star and spread it with the back of a spoon or a toothpick. You can also use a squeeze bottle or piping bag. Enjoy the cookies immediately, or let the icing set at room temperature for 6 to 8 hours.
