COUSIN CLEAVON'S REDNECK COOKING: Squirrel Head Cheese

It is that time of the year when the squirrels are coming out of the trees and starting to tease my dog. I am on the same page as my dog I hate seeing them and I try to chase them away. I really hate squirrels because they chase away all the pretty birds. So, about 4 years ago, I started to shoot them with an air rifle. The problem with shooting them is they can sometimes get stuck in the tree, and other times as soon as the body hits the ground the dog would come up and grab it.

I thought and thought about what the best way would be to get the squirrels down and the dog to not chew them up as badly. So, I got a cat and tried to train him how to remove the body from the tree and bring it to me. This took a lot of time, and I finally had to admit you can't train a cat to do anything, but I definitely got in shape for swimsuit season. I ended up bringing them down with a slingshot. The next hurdle was to get my dog to stop chewing up the squirrels. I tried everything to get her to stop but she was just faster than me. So, I learned how to use squirrels with all the holes in them.

After my dog brings me the bodies, I have to cut off all the parts she has chewed on; that just leaves me the head. Come to find out there is a lot of meat on a squirrel's head, so, I learned how to make squirrel-head cheese.

INGREDIENTS

10 squirrel heads

Package of unflavored gelatin

Salt and pepper

1 onion

1 green pepper

DIRECTIONS:

1. Remove the eyes and skin off the heads. Then boil the heads in water for 5 hours, adding salt and pepper.

2. After five hours drain the pot and pick off the meat from the skull.

3. Then finely chop up the onion and green pepper.

4. Mix the gelatin package with hot water and add the meat, onion, and green pepper. Then put the whole mixture in a bread pan so that it is easy to cut.

5. Let the head cheese set up.
